Chicken Adobo
Chicken adobo is a classic Filipino dish made by simmering chicken in soy sauce, vinegar, garlic, black pepper, and bay leaves until the meat is tender and the sauce turns savory, tangy, and rich. It is usually served with steamed white rice because the sauce is bold, salty, sour, and deeply flavorful.
Adobo is one of the most recognizable Filipino dishes. The vinegar-based cooking style has roots in older Filipino food preservation methods, while the name “adobo” came later through Spanish influence. Today, chicken adobo changes from household to household: some versions are sharper and more sour, some are slightly sweet, some are saucier, and some are reduced into a dark glaze.
This page shows four ways to make chicken adobo depending on your kitchen and cooking style: a quick weeknight version, a more traditional Filipino version, a best-possible version with deeper flavor, and a limited-equipment version for small kitchens or basic tools.

Method
- Cut the chicken thighs into bite-sized pieces about the size of a golf ball.
- Peel and roughly chop the garlic.
- In a cup or small bowl, mix the soy sauce, vinegar, water, brown sugar, and black pepper.
- Place a large frying pan or skillet over high heat and add the cooking oil.
- Wait 1–2 minutes until the oil is very hot.
- Add the chicken pieces in a single flat layer.
- Let the chicken cook without moving it for 3 minutes so the bottom browns and builds flavor.
- Flip the chicken pieces.
- Add the chopped garlic and stir for 1 minute until fragrant. Do not let the garlic turn black.
- Pour in the mixed soy sauce, vinegar, water, sugar, and pepper.
- Add the bay leaves and chicken bouillon powder or MSG if using.
- Wait until the liquid bubbles aggressively.
- Turn the heat down to low and cover the pan with a lid.
- Cook covered for 10 minutes.
- Remove the lid and turn the heat back up to high.
- Boil rapidly for 5–7 minutes, stirring occasionally, until the sauce reduces into a thick dark glaze that coats the chicken.

- Peel all the garlic cloves.
- Smash all the garlic cloves with the side of a knife.
- Finely chop half of the smashed garlic cloves and leave the other half as large smashed pieces.
- Lightly crush the black peppercorns with the bottom of a heavy cup or pan.
- Check the chicken thighs. Trim off any large hanging pieces of fat, but keep the skin attached.
- Place the chicken thighs in a large mixing bowl.
- Add the soy sauce, minced garlic, and crushed black peppercorns.
- Mix well until the chicken is coated.
- Cover the bowl and refrigerate for at least 2 hours. For deeper flavor, marinate overnight.
- Remove the chicken from the marinade and place it on a plate. Keep the marinade for later.
- Pat the chicken skin very dry with paper towels.
- Place a large heavy-bottomed pan or pot over medium-high heat and add the cooking oil.
- When the oil is hot and shimmering, place the chicken thighs skin-side down in the pan.
- Leave the chicken undisturbed for 5–7 minutes until the skin is dark golden brown and crisp.
- Flip the chicken and cook the other side for 2 minutes.
- Remove the chicken from the pan and place it on a plate.
- Turn the heat down to medium-low.
- Add the large smashed garlic pieces to the chicken fat in the pan.
- Cook for 1–2 minutes until fragrant and lightly browned. Do not let the garlic turn black.
- Carefully pour the reserved soy sauce marinade into the pan.
- Add the cane vinegar, chicken broth, brown sugar, and bay leaves.
- Do not stir after adding the vinegar. Leave the pan uncovered and let the liquid bubble gently for 3 full minutes.
- After 3 minutes, stir the sauce briefly.
- Return the chicken thighs to the pan with the skin facing up.
- Turn the heat down to low and cover the pan with a lid.
- Simmer gently for 30 minutes until the chicken is tender.
- Remove the lid and transfer the chicken thighs to a plate.
- Turn the heat up to medium-high.
- Boil the sauce uncovered for 10–15 minutes until it reduces into a shiny sticky glaze.
- Use a small spoon to skim off most of the clear oil floating on top.

- Return the chicken to the pan.
- Toss and flip the chicken in the glaze until every piece is coated.

- Cut the chicken thighs into bite-sized chunks about 5 cm wide.
- Peel the garlic cloves and chop them as finely as you can.
- Place a large frying pan or pot over medium-high heat and add the cooking oil.
- Once the oil is hot, lay the chicken pieces flat in the pan.
- Do not move the chicken for 3 minutes. Let the bottoms brown slightly so they build flavor.
- Turn the heat down to medium.
- Add the chopped garlic and stir for 1 minute until fragrant. Do not let the garlic turn black.
- Pour in the soy sauce, vinegar, water, brown sugar, black pepper, bay leaves, and MSG or chicken bouillon powder if using.
- Let the liquid come to a fast rolling bubble.
- Do not stir right after adding the vinegar. Let the sauce bubble uncovered and undisturbed for 2 full minutes to cook off the harsh vinegar smell.
- After 2 minutes, stir everything well.
- Turn the heat down to low and cover the pan with a lid.
- Simmer gently for 15 minutes until the chicken is cooked through and tender.
- Remove the lid. If the sauce still looks too watery, simmer uncovered for a few more minutes until it turns darker and slightly sticky.
- Remove and discard the bay leaves.
- Serve immediately over warm white rice.
