Chicken Adobo

Chicken adobo is a classic Filipino dish made by simmering chicken in soy sauce, vinegar, garlic, black pepper, and bay leaves until the meat is tender and the sauce turns savory, tangy, and rich. It is usually served with steamed white rice because the sauce is bold, salty, sour, and deeply flavorful.

Adobo is one of the most recognizable Filipino dishes. The vinegar-based cooking style has roots in older Filipino food preservation methods, while the name “adobo” came later through Spanish influence. Today, chicken adobo changes from household to household: some versions are sharper and more sour, some are slightly sweet, some are saucier, and some are reduced into a dark glaze.

Ingredients
  

  • 800 g boneless skinless chicken thighs
  • 120 ml soy sauce
  • 120 ml white vinegar
  • 40 g garlic
  • 1 tbsp coarse black pepper
  • 3 dried bay leaves
  • 2 tbsp brown sugar
  • 1 tbsp cooking oil
  • 60 ml water
  • 1/2 tsp chicken bouillon powder or MSG optional

Method
 

  1. Cut the chicken thighs into bite-sized pieces about the size of a golf ball.
  2. Peel and roughly chop the garlic.
  3. In a cup or small bowl, mix the soy sauce, vinegar, water, brown sugar, and black pepper.
  4. Place a large frying pan or skillet over high heat and add the cooking oil.
  5. Wait 1–2 minutes until the oil is very hot.
  6. Add the chicken pieces in a single flat layer.
  7. Let the chicken cook without moving it for 3 minutes so the bottom browns and builds flavor.
  8. Flip the chicken pieces.
  9. Add the chopped garlic and stir for 1 minute until fragrant. Do not let the garlic turn black.
  10. Pour in the mixed soy sauce, vinegar, water, sugar, and pepper.
  11. Add the bay leaves and chicken bouillon powder or MSG if using.
  12. Wait until the liquid bubbles aggressively.
  13. Turn the heat down to low and cover the pan with a lid.
  14. Cook covered for 10 minutes.
  15. Remove the lid and turn the heat back up to high.
  16. Boil rapidly for 5–7 minutes, stirring occasionally, until the sauce reduces into a thick dark glaze that coats the chicken.
  17. Turn off the heat.
  18. Remove and discard the bay leaves.
  19. Serve immediately over warm white rice.

Notes

This quick version skips the traditional long marinade. Browning the chicken first adds deeper flavor in less time.
Chicken thighs stay juicier than chicken breasts and are better for fast adobo.
Chicken bouillon powder or MSG is optional. It adds extra savory depth and makes the sauce taste richer without extra cooking time.
Watch the pan closely during the final reduction. The sauce should become glossy and sticky, but it can burn if reduced too far.

  • 1200 g bone-in skin-on chicken thighs
  • 120 ml regular soy sauce
  • 120 ml cane vinegar
  • 240 ml chicken broth
  • 1 whole head garlic
  • 1 tbsp whole black peppercorns
  • 4 dried bay leaves
  • 2 tbsp brown sugar
  • 1 tbsp neutral cooking oil

Method
 

  1. Peel all the garlic cloves.
  2. Smash all the garlic cloves with the side of a knife.
  3. Finely chop half of the smashed garlic cloves and leave the other half as large smashed pieces.
  4. Lightly crush the black peppercorns with the bottom of a heavy cup or pan.
  5. Check the chicken thighs. Trim off any large hanging pieces of fat, but keep the skin attached.
  6. Place the chicken thighs in a large mixing bowl.
  7. Add the soy sauce, minced garlic, and crushed black peppercorns.
  8. Mix well until the chicken is coated.
  9. Cover the bowl and refrigerate for at least 2 hours. For deeper flavor, marinate overnight.
  10. Remove the chicken from the marinade and place it on a plate. Keep the marinade for later.
  11. Pat the chicken skin very dry with paper towels.
  12. Place a large heavy-bottomed pan or pot over medium-high heat and add the cooking oil.
  13. When the oil is hot and shimmering, place the chicken thighs skin-side down in the pan.
  14. Leave the chicken undisturbed for 5–7 minutes until the skin is dark golden brown and crisp.
  15. Flip the chicken and cook the other side for 2 minutes.
  16. Remove the chicken from the pan and place it on a plate.
  17. Turn the heat down to medium-low.
  18. Add the large smashed garlic pieces to the chicken fat in the pan.
  19. Cook for 1–2 minutes until fragrant and lightly browned. Do not let the garlic turn black.
  20. Carefully pour the reserved soy sauce marinade into the pan.
  21. Add the cane vinegar, chicken broth, brown sugar, and bay leaves.
  22. Do not stir after adding the vinegar. Leave the pan uncovered and let the liquid bubble gently for 3 full minutes.
  23. After 3 minutes, stir the sauce briefly.
  24. Return the chicken thighs to the pan with the skin facing up.
  25. Turn the heat down to low and cover the pan with a lid.
  26. Simmer gently for 30 minutes until the chicken is tender.
  27. Remove the lid and transfer the chicken thighs to a plate.
  28. Turn the heat up to medium-high.
  29. Boil the sauce uncovered for 10–15 minutes until it reduces into a shiny sticky glaze.
  30. Use a small spoon to skim off most of the clear oil floating on top.
  31. Turn off the heat.
  32. Return the chicken to the pan.
  33. Toss and flip the chicken in the glaze until every piece is coated.
  34. Serve immediately with plain steamed white rice.

Notes

Bone-in skin-on chicken thighs give more flavor and a better texture than boneless chicken.
Do not skip drying the chicken skin before searing. Dry skin browns much better.
Do not stir or cover the pan immediately after adding vinegar. Letting the vinegar bubble uncovered helps cook off the harsh raw vinegar smell.
Plain white rice is the best serving option because the glaze is rich, salty, sour, and concentrated.

  • 1000 g bone-in skin-on chicken thighs and drumsticks
  • 120 ml soy sauce
  • 120 ml white cane vinegar
  • 30 g garlic

  • 1 tsp brown sugar optional

Method
 

  1. Peel the garlic cloves.
  2. Smash each garlic clove with the flat side of a knife or the bottom of a heavy cup. Do not mince the garlic.
  3. Pat the chicken pieces completely dry with paper towels.
  4. Place the chicken pieces in a large mixing bowl.
  5. Add the smashed garlic and soy sauce.
  6. Toss until the chicken is coated.
  7. Let the chicken marinate on the counter for 10–15 minutes.
  8. Place a wide heavy-bottomed pan over medium-high heat and add the cooking oil.
  9. Remove the chicken pieces from the bowl. Keep the leftover soy sauce and garlic marinade for later.
  10. Place the chicken skin-side down in the hot pan.
  11. Fry for 3–4 minutes per side until browned and slightly crisp.
  12. Pour the leftover soy sauce and garlic marinade into the pan.
  13. Add the water, black peppercorns, bay leaves, and vinegar.
  14. Do not stir after adding the vinegar.
  15. Let the liquid come to a rolling boil and bubble for 2 minutes.
  16. After 2 minutes, gently stir the sauce.
  17. Turn the heat down to low.
  18. Cover the pan and simmer for 30 minutes.
  19. Turn the chicken pieces over halfway through cooking.
  20. Remove the lid.
  21. If using the optional brown sugar, stir it into the sauce.
  22. Turn the heat up to medium.
  23. Simmer uncovered for 5–10 minutes until the sauce reduces into a dark slightly sticky glaze.
  24. Remove and discard the bay leaves.
  25. Serve hot with steamed white rice.

Notes

Brown sugar is optional. Traditional adobo does not need sugar, but a small amount can balance harsh vinegar without making the sauce sweet.
Smashing the garlic instead of mincing it gives classic garlic flavor while lowering the chance of burning.
Do not stir right after adding the vinegar. Letting the vinegar boil first helps remove the harsh raw vinegar taste.
Bone-in skin-on chicken gives a richer sauce and more traditional texture than boneless chicken.

  4. Once the oil is hot, lay the chicken pieces flat in the pan.
  5. Do not move the chicken for 3 minutes. Let the bottoms brown slightly so they build flavor.
  6. Turn the heat down to medium.
  7. Add the chopped garlic and stir for 1 minute until fragrant. Do not let the garlic turn black.
  8. Pour in the soy sauce, vinegar, water, brown sugar, black pepper, bay leaves, and MSG or chicken bouillon powder if using.
  9. Let the liquid come to a fast rolling bubble.
  10. Do not stir right after adding the vinegar. Let the sauce bubble uncovered and undisturbed for 2 full minutes to cook off the harsh vinegar smell.
  11. After 2 minutes, stir everything well.
  12. Turn the heat down to low and cover the pan with a lid.
  13. Simmer gently for 15 minutes until the chicken is cooked through and tender.
  14. Remove the lid. If the sauce still looks too watery, simmer uncovered for a few more minutes until it turns darker and slightly sticky.
  15. Remove and discard the bay leaves.
  16. Serve immediately over warm white rice.

Notes

Chicken thighs are better than chicken breasts for this fast version because they stay juicier and carry more flavor.
MSG or chicken bouillon powder is optional. It is not strictly traditional, but it adds quick savory depth to the sauce.
The vinegar rule matters. Let the vinegar bubble uncovered before stirring so the sauce tastes rounded instead of harsh or raw.
Serve with white rice because the sauce is salty, sour, and concentrated.
